Hazelnut-Walnut Heaven Cookies

Hazelnut-Walnut Heaven cookies make it onto my Christmas gift trays every year. I particularly love the melt in your mouth quality that these delicious cookies have. The three different textural elements compliment each other well; the crunchy nuts, creamy chocolate hazelnut spread, and the delicate cookie. You don’t need to save them for the holidays; they are a nice treat to have with your coffee all year round.
Cookie Ingredients
2 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 cup unsalted butter, softened
3/4 cup light brown sugar, packed
1-1/2 tsp. pure vanilla extract
1 cup finely chopped walnuts
Decoration Ingredients
Chocolate Hazelnut spread such as Nutella
finely chopped walnuts , approximately ½-1 cup for dipping
Preheat oven to 375°
To make cookies: In a gallon sized zippered plastic food storage bag combing flour, baking powder and salt. Shake bag well to evenly distribute the ingredients; set aside. With an cream together butter, brown sugar, and vanilla. Scrape sides occasionally with a silicone spatula
and cream until light and fluffy. With on its slowest setting gently pour in flour mixture. Scrape the sides of the bowl to incorporate all of the flour without over beating the dough; then stir in 1 cup finely chopped walnuts .
If dough is too soft to work, place it in the zippered plastic bag and place in refrigerator to chill. Scoop dough with a cookie scoop
onto parchment
lined baking sheets
and bake for approximately 8-12 minutes until their bottoms are lightly browned. Allow to cool on baking sheets
for approximately 5 minutes and then remove to wire cooling rack
to cool completely.
When cookies are completely cooled, spread tops with chocolate hazelnut spread, and then press tops into finely chopped walnuts. Now you have created Hazelnut-Walnut Heaven.

I love Nutella so much that I decided to use it as the glue for the walnuts in these Hazelnut-Walnut Heaven cookies. There are other chocolate hazelnut spreads out there, so please use your favorite. I personally feel that Nutella is the best. I was first introduced to it back in the early 80’s when I was an exchange student in Germany; my host mother served it every morning with fresh baked rolls. Mmm that brings back some great memories. Today, many years later, we can find it in most American supermarkets near the peanut butter.
