This Cake Mix Cookie Recipe is one that I pull out when I just want to make a quick batch of cookies. This is an extremely easy one to do with the kids because it doesn't take a lot of putzy measuring. You can even use this cookie recipe to teach a history lesson; the history of cookies that is. It seems that the earliest cookies were actually little piles of cake batter baked on flat stones in the fire. I like to do as much baking from scatch as possible, but sometimes you just need to give in to modern mixes. As far as cakes go, you often can do much better than a cake mix with just a little more effort by doing it from scratch. I like to save the cake mixes for an application such as this cake mix cookie recipe. Someday, I'll share my cake mix banana bread recipe; also a good one!
1 box (18-1/4 oz.) white, yellow, or chocolate cake mix
1/2 cup vegetable oil, I prefer canola
2 large eggs
1 cup semi-sweet chocolate chips
1/2 cup chopped walnuts
or chopped pecans
(optional)
Preheat oven to 350º F. Line baking sheets
with parchment
paper.
With an beat cake mix, vegetable oil and eggs until smooth and creamy. Fold in chocolate chips and nuts, if using. Drop dough/batter by the heaping teaspoons onto the parchment
lined baking sheets
.
Bake for 8-10 minutes. Allow to cool for two minutes on baking sheets
and then transfer to wire cooling rack
to cool completely.
