This Easy Monkey Bread Recipe is plain and simple ooey gooey comfort food. This recipe for monkey bread, also called sticky buns or caramel rolls, was sent to
me by Theresa in Greenfield Wisconsin, she says it's just the thing for a lazy saturday morning; and I agree. There are two tricks to this recipe: first you must
use "cook and Serve" pudding mix, instant won't work, and you need to allow time for the rolls to rise; overnight works best.
Take a few minutes before bedtime to throw this sticky buns recipe together and you will be rewarded with ooey, gooey goodness
in the morning.
1/2 cup chopped pecans
24 frozen dinner roll dough balls
1 (3.5 oz.) package of cook and serve butterscotch pudding mix
1 tsp. ground cinnamon
1/2 cup unsalted butter
1/2 cup packed light brown sugar
To serve in the morning prepare the night before.
In a small saucepan or in a microwave safe bowl, melt the butter and the brown sugar together; set aside. Spray a bundt pan
with non-stick cooking spray. Sprinkle chopped pecans
evenly in the bottom of the sprayed pan and top with 12 dough
balls. Sprinkle pudding mix over dough balls and top with cinnamon. Place the remaining 12 dough balls evenly in the sprayed pan and top
with the butter and sugar mixture. Cover the pan loosely with plastic wrap and set in a draft free space to rise over night.
In the morning if the dough hasn't risen sufficiently (it should at least reach the top of the pan) you can give the dough rising a boost by placing the pan in a warm oven.
You don't want the oven to be hot, just slightly warm; turn the oven on, allowing it to get just slightly warm, turn it off and place the pan of monkey bread inside,
closing the door. This last boost should only take between 30 minutes to one hour.
To bake the sticky buns, preheat oven to 350º F, and bake for 30-35 minutes until the top is golden brown. Allow the monkey bread to cool in the pan for ten minutes, and then invert it onto a large serving platter.
