Molasses and Spice Cookie Recipe

Picture of a Molasses and Spice Cookie This Molasses and Spice Cookie Recipe is one of my favorites. There is nothing like the smell of these cookies as they bake; it's warm and comforting and just plain good. They remind me of Grandma's house in the fall; it always smelled like gingerbread cookies. I like to roll the dough balls in sugar in the raw because of its carmel flavor, but if you only have white granulated sugar that's fine too. This makes a big batch of cookies so you will need a full size .


6 Cups all-purpose Flour

2 Tbs. baking Soda

4-1/2 tsp. ground cloves

2 Tbs. ground ginger

2 Tbs. ground cinnamon

1/2 tsp. salt

2-1/4 Cups solid vegetable shortening

3 Cups white granulated sugar

3 large eggs

1 Cup unsulfured molasses

sugar in the raw or white granulated sugar for rolling


Preheat oven to 375º. In a gallon sized zippered food storage bag combine flour, baking soda, cloves, ginger, cinnamon and salt. Seal bag and shake well to incorporate everything; set aside. In a large mixing bowl with an cream solid shortening and sugar. Scraping occasionally with a silicone spatula, make sure that the creamed mixture is light and airy. Add eggs one at a time and molasses beating well after each addition; beat until light and fluffy.

With your on it’s lowest speed, slowly pour flour mixture into the creamed mixture; scraping sides of bowl when necessary. Do not over beat; beat only until combined.

With a cookie scoop, scoop out balls of dough and roll in sugar in the raw or granulated sugar. Place balls onto parchment lined baking sheets. Bake for approximately 8-11 minutes, or until the cookies are set in the center and just begin to crack. Do not over bake. Bottoms should be just golden brown. Allow to cool on baking sheets for approximately five minutes and then carefully remove to wire cooling rack to cool completely.
