Quick Breads are some of my favorite things to create in my kitchen. The reason for that is simple and obvious; they are quick. The ingredients typically come together easily and because they are not leavened with yeast, you don’t need to allow time for the dough to rise. Therefore you have almost immediate gratification. There is also nothing like the smell of a beautiful nut bread like banana nut bread wafting from your kitchen. This baked goods family includes not only sweet and savory loaves it also include corn breads, spoon breads, coffee cakes, muffins, scones and biscuits. All of those items have relatively simple steps to reach the ultimate goal; homemade goodness.
On my Christmas cookie trays I often include a small loaf to center the tray and surround it with other homemade treats. I find that Quick Breads are fabulous to have on hand for simple gifts to teachers and neighbors. They also are a well appreciated thank you for when a friend helps you out in a pinch. When I make a loaf, I usually mix up an extra Ziploc bag of dry ingredients to store in my panty to make the next round of baking that much quicker. Having a few loaves or bags of muffins in my freezer is welcome when a home-baked gift is needed; or to help me stock up for the upcoming bake sale at the kid’s school. Please see my
