Russian Strudel Recipe

She is a Food Stylist and Photographer at istockphoto.com and was kind enough to share with us this old family recipe and allow me to use this beautiful photo of the end product. Yula is of Russian descent and tells me that this recipe has been with her family for a long time, with every family member altering it somehow. I found it to be flaky and full of flavor, but not overly sweet. Yula calls for strawberry jam, but if you prefer a different flavor, go ahead and alter it. My family is not a fan of raisins so I left those out, but if you like include them. I love recipes that you can easily tailor to your preferences




Pastry

1 cup all purpose flour

1-1/2 tsp. white granulated sugar

¾ cup cold butter, cut into pats

1/3 cup sour cream

Filling

1-1/2 tsp. vegetable oil

1/2 cup coarsely chopped walnuts or pecans

¼ cup raisins

1/3 cup strawberry jam

Topping

White granulated sugar for sprinkling

Ground Cinnamon for sprinkling






In the work bowl of a full sized food processor, pulse together flour, sugar and butter. Pulse until the mixture resembles coarse crumbs. Add the sour cream and pulse until it forms a dough ball; it should only take a few pulses. Split the dough in half, flatten into discs, wrap each half in plastic wrap and refrigerate for at least one hour.

Line two large baking sheets with parchment paper; set aside. Preheat oven to 350º F. One portion at a time, on a lightly floured surface, roll out each portion of dough into approximately a 14x10 inch rectangle. The dough will be very soft and will tend to stick. Use only enough additional flour to ensure that the dough does not stick. Brush the rectangle of dough with oil, avoiding 1 inch of the outside border; spread jam, raisins, and nuts evenly over the oiled dough. Fold the dough in thirds lengthwise, so you will have a 14 inch long strudel; press gently on the seams to seal the dough. Carefully move the strudel to the prepared baking sheet and repeat the process with the second half of the dough. Brush the tops and sides of strudels with sugar and cinnamon.

Bake for 30 minutes until light brown. Serve while slightly warm or at room temperature.
