Texas Sheet Cake Recipe - A Chocolate Texas Sheet Cake

This Texas Sheet Cake Recipe was given to me by a friend when we first moved to Texas. Since then I have had it on
many different occasions; variations of this cake seem to be a staple in this great state. You will see it at the
fanciest of affairs served on the best china to the most homey church potluck served on your best paper plates. It is
fudgy and good and there is just something comforting about it.
Cake
2 cups all purpose flour
2 cups white granulated sugar
2 Tbs. buttermilk powder
1/4 tsp salt
1 tsp. baking soda
1 cup unsalted butter
1/2 cup milk
1 cup fresh brewed coffee
1/4 cup cocoa powder
1/2 tsp. ground cinnamon
2 large eggs, beaten
1-1/2 tsp. pure vanilla extract
Chocolate Glaze Icing
1/2 cup unsalted butter
1/4 cup plus 2 Tbs. Milk
3 Tbs. cocoa powder
3-3/4 cup powdered sugar (one 1 pound box)
1-1/2 tsp. pure vanilla extract
Preheat oven to 400º F. Spray a 15-1/2x10-1/2 inch jelly roll pan
with baker's cooking spray, the kind with flour in it and set aside. In a large mixing bowl, whisk
together the flour, sugar, salt, baking soda and buttermilk powder; set aside. In a medium sized saucepan combine butter, cocoa, cinnamon, coffee and milk. Bring to a boil over medium-high heat. Pour the liquid mixture into the flour mixture and stir with a wooden spoon or a rubber spatula until well combined. Add the egg and mix it in well, stir in the pure vanilla extract . Pour batter into the prepared jelly roll pan
and tap it gently on the counter to release some air bubbles.
Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean. While the cake is baking make the glaze icing. It needs to go on the cake as soon as it comes out of the oven.
To make the glaze icing: In a medium sized saucepan combine the butter, milk, and cocoa. Bring to a boil, stirring often; boil for approximately 2 minutes and then transfer to the bowl of an or a large mixing bowl. Add powdered sugar and beat, preferably with the whisk attachment until smooth; scraping the sides of the bowl often with a silicone spatula . Add the pure vanilla extract
and beat to combine.
When the cake comes out of the oven, immediately take a fork and poke holes all over it. Beat the glaze icing one last time before icing the cake. Spread icing over the entire cake and allow it to cool in it's pan on top of a wire cooling rack .
