This Toffee Chocolate Chip Cookie Recipe makes my most famous cookie. The resulting cookie has a fabulously chewy texture with a flavor that you won't be able to resist. This cookie dough was my most requested cookie dough; so much so that I had trouble keeping it on the freezer shelf. When baking this cookie, please use parchment paper to line your baking sheets. The toffee in the dough makes it want to stick to everything. You may also halve this toffee chocolate chip cookie recipe if your won't handle large recipes.
2 cups unsalted butter, at room temperature
2 cups packed light-brown sugar
3/4 c. white granulated sugar
2 Tbs. pure vanilla extract
4 large eggs
5 - 1/2 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
2 - 1/2 cups semisweet chocolate chips
1 - 12 oz. package milk chocolate toffee chips
Preheat oven to 350º. With your , cream together butter and sugars, until pale and fluffy. Add eggs, one at a time, beating well after each addition. Beat in pure vanilla extract .
In a gallon size zippered food storage bag, combine flour, baking soda and salt. Seal bag well and shake until all ingredients are evenly distributed. With your on its slowest speed, gradually add flour mixture to the creamed mixture. Do not over mix at this point; mix only until combined. Remove from the mixer and fold in chocolate chips and milk chocolate toffee chips.
With a cookie scoop , scoop out balls of dough and place 2 inches apart on parchment
lined baking sheets .
Bake for approximately 8-12 minutes. Do not over bake. Bottoms should be just golden brown. Allow to cool for 5 minutes on baking sheets
and then transfer to a wire cooling rack
to cool completely.
