This Vanilla Cookie Recipe promises to be the most unusual recipe you have ever encountered. Not only does it have a strange mixing method, it also has a very odd way to rest the cookie dough before baking. It’s end product is extremely difficult to describe; people have told me that it tastes like marshmallow, fortune cookies and Nilla Wafers. This is definitely a cookie that wows, it will probably be the main topic of conversation at the next bake sale. It’s texture is both crisp and chewy, you will just have to try them to understand them. Theoretically you could double this recipe, but keep in mind that you will need enough baking sheets
to accommodate all the cookies at once. This vanilla wafer recipe will make between 3 and 4 dozen cookies. I hope my Vanilla Cookie Recipe will become a family favorite in your home as it is in mine.
3 eggs
1 cup white granulated sugar
1 Tbs. plus 2 tsp. pure vanilla extract
1-1/2 cups all purpose flour
With an , beat eggs and white sugar together for 30 minutes. Set the timer and just let it go. You could use an electric hand mixer, but imagine how tired your arm would be after 30 minutes; a good quality stand mixer is best. And please do not short cut the time, it is important. Add the pure vanilla extract
and mix to combine. Slowly add the flour and mix until just incorporated; do not over mix at this time. Drop batter/dough by rounded teaspoonfuls onto parchment
lined baking sheets . Let the cookie batter/dough stand at room temperature overnight.
In the morning bake the cookies in a preheated 350º oven for 12-15 minutes. Pull the parchment
paper with the cookies still attached onto wire cooling rack
to cool. When the cookies are completely cool, you need to gently peel them from the paper.
